** All our Alaska Crab is sold in “clusters”, exactly how it’s processed in Alaska. Clusters are the three legs and claw attached to the shoulder (body). Processed at a shore-based plant using fresh water producing a very sweet and succulent taste and texture.


 

Clusters range in size from 25 to 35 ounces each. Frozen is available year-round. During the season, which runs mid-October until about mid-November we also offer fresh cooked, never frozen. You won’t eat better King Crab than ours! Correctly processed producing a sweet flavor (not salty) and succulent texture.

Season: October-November.

There are two types of Snow Crab, Bairdi and Opilio. Opilio is the one who find at such places as Hooters, Red Lobster and all-you-can-eat buffets. Bairdi on the other hand is not so easily found in the U.S. Twice the size and twenty times better! To most in the crab industry it’s considered better tasting than Red King Crab.

Season: October-November.

The most common Snow Crab, producing smaller clusters than Bairdi. If correctly processed will be sweet and succulent.

Season: January-April.

 



 

Clusters tend to be larger than most west coast Dungeness, weighing 8 to 12 ounces each. Processed at the same plant in Dutch Harbor as is our King and Snow Crab.

Season: June-September.

Two crab boats who deliver into Dutch Harbor will start fishing August 1st so we will have retail gift packs beginning Sept. 1st.

Medallions are 100% pure Red King Crab. Each weighs 2 to 3 ounces each. They can be grilled, baked, pan-fried, sautéed or deep-fried. Their only limitation is your imagination.



 

What Makes Alaska Weathervane Scallops Superior to the Others

    1. Alaska Weathervane Scallops naturally are much sweeter and delicate then these other scallop species.
    2. Our frozen at sea Alaskan scallops are frozen within four hours of capture locking in their natural sweet flavor. Eastern scallops often stay on ice at sea for well over a week before going to a processor to be frozen, or worse sold as “fresh”. Can you imagine 2 week old scallops called “fresh”? I know no fishermen that would eat that!
    3. Alaskan Scallops never have the “Sweet meat” attached; this flavorless tendon is usually left on for added weight (5 to10% added weight) on Eastern Scallops and must be removed by the chef.
    4. Our Alaskan Scallop never is soaked in fresh water to increase size and weight. Many Eastern Scallop products are soaked in water and still called “Dry” as the FDA allows the “dry” term to be used as long as water content does not exceed 82%. Alaskan Weathervanes natural water content is 75 to 79% and we never attempt to alter it, as it would ruin their natural wild sweetness.
    5. Alaska Weathervanes block frozen (5 lbs blocks – divided into four 1.25 lbs bags) have a very long shelf life with no freezer burn degradation (2 years). The Eastern individually quick frozen (IQF) sea scallops have a very short life (just a couple months) before freezer burn sets in.
